Nettle and Dandelions: Spring Recipes for Fatigue and Dull Skin

Sharing six simple dishes made from greens that grow underfoot

Why nettles and dandelions are the perfect spring support

After a long winter, the body is depleted: lacking vitamins, the immune system is weakened, and metabolism is sluggish. Pharmacy supplements help, but often provide only a temporary effect. Meanwhile, two powerful natural remedies grow literally at your feet. Nettles contain vitamins C, K, B group, iron, calcium, and chlorophyll. They improve blood composition, increase hemoglobin, and provide energy. Dandelions are rich in vitamins A, C, E, potassium, and inulin—a prebiotic that restores gut microflora and improves digestion.

Important warning: Collect greens only in ecologically clean areas—away from roads, industrial zones, and dog walking spots. Always pour boiling water over nettles before consumption to remove their sting. Rinse dandelions thoroughly in cold water.

Contraindications: gallbladder diseases (dandelions have a choleretic effect), tendency to thrombosis (nettles increase blood clotting), individual intolerance.

Six simple recipes for every day

      1. Light spring soup

Ingredients: 1 potato, ½ carrot, 1 onion, 1.5 liters of broth, a handful of nettles and dandelions, sour cream for serving.

Preparation: In boiling broth, add chopped vegetables and cook for 15 minutes. Five minutes before readiness, add finely chopped greens. Season with salt and pepper. Serve with sour cream.

      2. Scrambled eggs with spring greens

Ingredients: 2 eggs, 1 onion, a handful of nettles and dandelions, oil.

Preparation: Sauté finely chopped onion. Add blanched nettles and rinsed dandelions, fry for 1–2 minutes. Crack in the eggs, stir, season with salt, and cook until done.

      3. Green smoothie

Ingredients: a handful of nettles (blanched), a handful of dandelions, 1 banana, 1 cucumber, 200 ml of water or coconut milk, ice.

Preparation: Place everything in a blender and blend until smooth. The banana softens the bitterness of the greens, while the cucumber adds freshness.

      4. Dandelion salad with nuts

Ingredients: young dandelion leaves, walnuts, olive oil, lemon juice, honey, salt.

Preparation: Soak the leaves in cold water for 10 minutes to remove bitterness. Mix oil, lemon juice, and honey. Drizzle over the salad and sprinkle with nuts.

      5. Nettle puree with potatoes

Ingredients: 3–4 potatoes, a handful of nettles, 50 ml of milk, butter, salt.

Preparation: Boil the potatoes. Blanch the nettles and chop finely. Mash the potatoes with butter and milk, add the nettles, and mix.

      6. Spring nettle pesto

Ingredients: a handful of nettles, 1 tbsp of nuts, 30 g of hard cheese, 2–3 tbsp of olive oil, 1 clove of garlic, salt.

Preparation: Blend all ingredients until smooth. Use as a sauce for pasta, a spread on bread, or an addition to soups.

What results to expect in 7–10 days

The author noticed changes within a few days:

      - Digestion improved—no more feeling like food is "stuck."

      - Portions decreased—satiety came faster.

      - Daytime drowsiness disappeared—energy without caffeine.

      - Cravings for sweets decreased—blood sugar levels stabilized.

      - Skin became fresher—dull complexion disappeared.

Continuation: how to consolidate the results

The spring "course" of nettles and dandelions is best conducted in May when the greens are young and most beneficial. It is enough to include 1–2 dishes a day for 2–3 weeks.

What to do after the course:

      - Dry nettles and dandelions for winter. Dried leaves can be added to soups and teas.

      - Make a tincture from dandelion roots—it stimulates the work of the gastrointestinal tract and liver.

      - Switch to seasonal vegetables—radishes, green onions, lettuce, wild garlic—to maintain the effect.

And remember: even if you don't believe in rural habits, try at least one recipe. Your body will thank you in spring.
