      They turn out to be hearty, aromatic, and have a texture reminiscent of meat, while being made from accessible ingredients and suitable for a daily menu.

      Ingredients:

      Lentils (red or green) - 200 g

      Carrot - 1 pc.

      Onion - 1 pc.

      Garlic - 1-2 cloves

      Breadcrumbs - 3-4 tablespoons (for the filling) + for coating

      Vegetable oil - for frying

      Salt, black pepper, coriander or paprika - to taste

      Fresh herbs (parsley or cilantro) - optional

      Step-by-step recipe:

      Rinse the lentils and boil until soft: red - 10-15 minutes, green - 20-30 minutes. It is important not to overcook - the grains should retain their shape. Drain and cool.

      Finely chop the onion, grate the carrot. Sauté the vegetables in vegetable oil until soft. Add garlic and heat for another 30 seconds.

      Mix the lentils with the vegetables and lightly puree with a blender, leaving small pieces for texture.

      Add spices, herbs, and breadcrumbs. Mix and let the mixture sit for 10 minutes.

      Form patties, coat them in breadcrumbs.

      Fry over medium heat for 3-4 minutes on each side until golden brown.

      Helpful tips:

      For a richer flavor, add a bit of soy sauce or smoked paprika.

      If the mixture is too soft, increase the amount of breadcrumbs.

      The patties can be baked in the oven at 180°C for about 20 minutes - this will make the dish less calorie-dense.

      What to serve with:

      Serve the patties hot with mashed potatoes, fresh vegetables, or a light sauce based on tomatoes or herbs. This versatile dish is suitable for both a family lunch and a Lenten dinner.
