This summer soup came to us from the Eastern Slavs. In ancient times, okroshka did not contain either potatoes or sausage — they simply did not know them. It was made with turnips, and the taste was quite different, more astringent. Today, the recipe has changed beyond recognition, but the base remains: a cold soup made with kvass or a fermented milk base, resembling Olivier salad in liquid form.
Classic ingredients (for 2 servings)
Boiled meat — 150 g
Radish — 100 g
Boiled potatoes — 200 g
Dill — 80 g (plus parsley and green onions if desired)
Boiled eggs — 2 pcs.
Sour cream — 50 g
Kefir — 300 ml
Water — 350 ml
Lemon — ½ piece
Salt, pepper — to taste
How to prepare: step by step
Herbs are the main players.
Finely chop the dill, onion, and parsley. Then take a pestle and lightly crush the herbs right in the bowl, adding salt beforehand. This will help them release their juice and aroma.
Cut the vegetables correctly.
Peel the cucumber. Cut the radish, cucumber, and boiled potatoes into thin sticks or small cubes. Leave one-third of the potato — it will be useful later.
Assemble the base.
In a deep bowl, place the chopped eggs, potatoes (two-thirds), radish, cucumber, herbs, and finely chopped meat.
The dressing.
Add sour cream and kefir, and mix well.
The main secret — two ingredients
And now for the reason I am writing this text. On top of the kefir and sour cream, I pour in cold water (350 ml) and squeeze the juice of half a lemon. It is the water that makes okroshka a drink rather than a thick salad. And the lemon adds a slight acidity that binds the flavors of the meat, vegetables, and herbs into a whole.
Never use soda or vinegar — they overpower the natural taste. Lemon works gently and nobly.
The final touch
Mix everything thoroughly, add salt and pepper to taste. Put the okroshka in the refrigerator for at least 30 minutes — it should steep and "make friends." Serve with the remaining potato cube in the bowl for texture.
Try this recipe at least once. Water and lemon are the two ingredients that turn ordinary okroshka into a dish that asks for seconds. In the summer heat, it is a lifesaver. Cook with pleasure and amaze your guests.
