However, to ensure that a trip to nature brings only positive emotions, experienced berry pickers advise following a few simple but important rules.
Preparing equipment and remembering safety
When heading into the forest, forget about shorts and t-shirts. The best choice is dense clothing in light colors with long sleeves and pants tucked into high boots. Be sure to cover your head with a bandana or a sun hat, and protect your neck with a scarf – this will guard against ticks and the scorching sun. However, it’s not advisable to spray your hands with chemical sprays: the scent can repel not only insects but also spoil the delicate aroma of the berries. It’s better to wear thin cotton gloves. The main enemies of the picker on a hot day are horseflies and mosquitoes. The only thing that saves from them is the right clothing: the cuffs of sleeves and pants should fit snugly against the body. If insects do become a problem, use a folk remedy – a solution of vanillin in water (one packet per liter) and spray it on your clothes. The scent is pleasant for humans and reliably repels horseflies and gnats. It’s best to pick berries in the first half of the day, when the dew has already dried but the sun is not yet scorching – this way the strawberries will be dry and won’t get squished on the way home.
Thick grass, where the largest strawberries hide, is a high-risk area. Before reaching into a bush, be sure to tap and part the grass with a long stick. By making noise, you will alert a snake to your approach – the reptile will slither away on its own. Under no circumstances should you try to catch or kill it: a snake only attacks in self-defense. Always take a fully charged phone, a supply of water, and a small snack with you into the forest.
In brief about gathering
Pick the berries carefully, holding them by the stem to avoid damaging the bush. Don’t put too many in one container – strawberries are very delicate and will quickly release juice. The ideal container is a wide, shallow basket or a plastic bucket. Experienced pickers adapt a bucket on a belt behind their back, keeping their hands free. Leave the forest before noon, when the heat subsides but insect activity has not yet increased.
What to prepare from the fragrant harvest?
Classic jam (recipe "Five-Minute Jam")
For 1 kg of berries, take 1 kg of sugar. Sort the strawberries, removing the sepals and withered leaves. Sprinkle the berries with sugar in an enameled basin and leave in the refrigerator for 6-8 hours – during this time, juice will be released. Place the basin over low heat and bring to a boil. Cook for exactly 5 minutes, carefully skimming off the foam. Pour the hot jam into sterilized jars. To prevent the jam from crystallizing during storage, add a pinch of citric acid at the end of cooking.
Drying for fragrant tea
This method allows you to preserve vitamins to the maximum. You can dry the berries whole or cut them into slices. Spread the strawberries in a single layer on a baking sheet lined with parchment paper and place in the oven at the lowest temperature (40-45°C) with the door slightly open for 6-8 hours.
Don’t throw away the strawberry leaves!
When dried, they add a tart forest aroma to tea and contain a lot of vitamin C. Brew a handful of dried berries and leaves in a teapot – this drink warms wonderfully in winter and helps strengthen the immune system.
Freezing
The simplest way to preserve the taste of summer. Spread clean, dry berries in a single layer on a flat plate or cutting board and place in the freezer for 2-3 hours. Then transfer the frozen strawberries to a bag or airtight container. Thanks to shock freezing, the berries won’t stick together, and you can easily take out just the right amount for baking, compote, or dessert decoration.
