Size and weight. Try to choose a watermelon of medium size. Too large ones are often overripe, while too small ones are unripe. The main marker of juiciness: for its size, the watermelon should be heavy. A light fruit is likely either unripe or has started to dry out.
Shape. Round watermelons are often sweeter and juicier than elongated ones (which are sometimes called "boys"), while round ones are "girls." But remember: this is a folk sign, not a strict botanical fact. First and foremost, look at other signs.
Flesh (if you have the opportunity to assess). A juicy and sweet watermelon has bright red or rich pink flesh, with small shiny fibers, looking juicy and slightly crunchy. Avoid fruits with white streaks, loose or pale flesh. The seeds of a ripe watermelon are dark brown or black, hard. If the flesh has an unnaturally bright, purple hue or yellow fibers — this may be a sign of excess nitrates.
