Homemade preparations are an excellent opportunity to preserve the harvest for winter, but one must remember the risk of food poisoning. Mistakes made during the canning process can lead to severe infectious diseases, including botulism. To ensure that the preserves are not only tasty but also safe, it is essential to strictly follow certain rules.
Step 1. Careful selection of raw materials and hygiene
The safety of the product begins with compliance with sanitary standards in the kitchen. Before starting work, wash your hands with soap, treat the work surfaces, and all kitchen utensils.
No signs of spoilage. Only fresh fruits without damage are suitable for canning. Products with the slightest signs of rot or wormholes must be discarded: pathogenic bacteria actively multiply in damaged areas.
Thorough washing. Vegetables and fruits must be rinsed under running water. Root vegetables should be scrubbed to completely remove soil particles, which may contain botulinum spores. Greens and salad leaves are recommended to be soaked in cold water beforehand.
Helpful tip: using the blanching method (briefly scalding the fruits with boiling water followed by rapid cooling) helps to clean the product more effectively.
Step 2. Mandatory sterilization of containers
Before use, carefully inspect glass jars: they should not have micro-cracks or chips. Only lids without deformations and signs of rust are allowed. The containers must be thoroughly washed with detergent and then sterilized to kill bacteria and mold spores.
Reliable sterilization methods:
• Boiling: place jars neck up in a container with boiling water for 15–20 minutes, then turn them upside down on a clean towel. The lids should also be boiled.
• Steam treatment: hold the jar neck down over boiling water for about 5 minutes, allowing steam to fill the container completely.
• In the oven: place jars in a preheated oven at 100–130 °C for 5 minutes, then let them cool inside with the door closed.
Step 3. Packaging and high-risk products
Packaging products into sterile jars should be done immediately after thermal processing. The lids must be sealed tightly, and the jars turned upside down to create a proper vacuum.
Special attention to mushrooms and meat! These are products with the highest epidemiological risk, which most often become a medium for the development of botulism.
Mushrooms are preferable to freeze (storage period - up to 6 months) or dry from a food safety perspective. When canning mushrooms, good preparation of raw materials with thorough washing under the cap (where soil particles may accumulate), adherence to the recipe (acid and salt concentrations), and thermal processing regime are critically important.
When working with meat, use only fresh chilled products, conduct cutting quickly in a cool room, and eliminate cross-contamination (contact of raw meat with other products).
Important: specialists strongly recommend that people from at-risk groups, such as pregnant women, the elderly, and individuals with weakened immune systems, be cautious about consuming any homemade preserves.
Step 4. Storage conditions
Labeling. Be sure to stick labels on jars indicating the product name and exact production date.
Temperature regime. Homemade preserves require storage in a dry, dark, and cool place, protected from sharp temperature fluctuations.
After opening. An opened jar must be stored exclusively in the refrigerator and consumed as quickly as possible. Meat and fish preserves should preferably be subjected to thermal processing before consumption.
If the lid is bulging, deformed, or rusty, or if the contents are cloudy or show signs of fermentation, the preserves should not be consumed!
