      Specialists from the Rospotrebnadzor Office for Tatarstan shared important tips for homemade preserves. To obtain tasty and safe canned goods, it is necessary to follow a few simple rules.

      Key recommendations include using only fresh, high-quality vegetables and fruits, avoiding produce with signs of spoilage. When gathering mushrooms, it is important to carefully cut the stems so as not to contaminate the harvest.

      Before canning, products should be washed thoroughly, and jars and lids sterilized for at least 30 minutes. This will help prevent microbial growth and extend shelf life.

      It is recommended to add at least 10% salt per 100 grams of product and to seal jars with capron (nylon) lids to ensure air access and prevent toxin formation. Preserves should be stored in a cool, dark place, and bloated jars must be disposed of immediately.

      Experts also warn against buying homemade preserves at markets, where it is difficult to control preparation conditions, and advise carefully checking expiration dates and the appearance of packaging when buying in stores. Spoiled pickles may not have an unpleasant smell or taste, but consuming them can be dangerous to health.
