Spicy snack: pickling garlic in jars for the winter
Spicy, crunchy, with a rich aroma of spices, it perfectly complements meat dishes, pickles, and just bread. I will share two tried-and-true methods of preparation: the classic hot method for winter preparations and a quick cold method that will be ready in just a week.
Why pickled garlic is a great snack
Garlic in marinade is not just a way to preserve the harvest, but a true culinary discovery. The cloves lose their excessive pungency but retain a firm texture and acquire a spicy sweet-and-sour note. Such a snack is suitable for both festive tables and everyday menus. I have chosen two options: the classic hot method for long-term storage and the quick cold method for those who do not want to wait several months.
Recipe #1. Classic (hot marinade for winter)
Ingredients for two half-liter jars
Garlic — 500 g (peeled cloves)
Water — 500 ml
9% vinegar — 100 ml
Sugar — 2 tablespoons
Salt — 1 tablespoon (level)
Bay leaf — 2 pieces
Black peppercorns — 8–10 pieces
Cloves — 2–3 buds (optional)
Fresh herbs (dill, parsley) — optional
Step-by-step preparation
Step 1. Separate the heads into individual cloves and remove the dry husk. If the cloves are large, cut them in half lengthwise.
Step 2. Thoroughly wash the jars with baking soda and sterilize them in the oven at 120 degrees for about 15 minutes or over steam. Boil the lids as well.
Step 3. Place the spices at the bottom of each jar: bay leaf, black pepper, cloves, and fresh herbs. Tightly fill the jar with the peeled cloves.
Step 4. To prepare the marinade, bring the water to a boil, add salt and sugar, and stir until completely dissolved. Remove from heat and carefully pour in the vinegar.
Step 5. Pour the hot marinade over the garlic in the jars to the very top. Immediately seal with lids. Turn the jars upside down, wrap them in a warm towel, and leave until completely cool.
Storage and tasting
Store the preparations in a cool place — cellar or refrigerator. The first tasting can be done after 3–4 weeks, but the true rich flavor will develop after 2–3 months.
Recipe #2. Quick cold method (without sterilization)
This option is perfect when you want to try pickled garlic in just a week, without long waiting.
Ingredients for a half-liter jar
Garlic — 400 g
Water — 100 ml (boiled and cooled)
Salt — 1 tablespoon
6% vinegar — 50 ml
Ground black pepper — 2–3 pinches
Step-by-step preparation
Step 1. Peel the cloves from the husk, trim the dark tips and damaged areas, and rinse in cold water.
Step 2. In a separate container, mix salt and ground pepper, pour in cold water and vinegar. Stir thoroughly until the salt is completely dissolved.
Step 3. Tightly pack the prepared cloves into a clean jar and pour the cold marinade over them so that it completely covers the garlic.
Step 4. Close the jar with a lid (a nylon one will do) and place it in the refrigerator.
Tasting
You can taste it after a week. Store this preparation strictly at a temperature not exceeding 5–6 degrees.
Helpful tips for perfect results
Choosing garlic. Young garlic is best — it is juicier, tenderer, and much easier to peel.
Cleaning hack. To make the husk come off easily, soak the cloves in cold water for 20–30 minutes or place them in a closed jar and shake vigorously.
How to avoid discoloration. If you soak peeled garlic in cold water for a few hours before pickling, it will retain a pleasant white color.
Experimenting with spices. Don’t be afraid to add coriander seeds, mustard seeds, hops-suneli, or a bit of hot chili pepper to the marinade.
Striking color. If you want to surprise your guests, add a bit of beet juice to the marinade — the garlic will take on a beautiful pink hue.
Storage times. After opening a jar with the cold method, it’s best to consume it within a couple of months — over time, the garlic may start to taste bitter.
